Light Classic Lasagna
A lighter version of classic lasagna using lean ground turkey, part-skim ricotta, cottage cheese, and reduced mozzarella while maintaining traditional layers.

Ingredients
Cheese Layer
- 15 oz part-skim ricotta cheese
- 15 oz low-fat cottage cheese — replaces half of the ricotta
- 2 whole eggs — lightly beaten
- 1.25 cups shredded part-skim mozzarella — divided
- 1 cup grated parmesan cheese — divided
Meat Sauce
- 1 lb lean ground turkey — replaces ground beef or sausage
- 4 cups pasta sauce — two jars
- salt — to taste
- black pepper — to taste
Pasta
- 8 oz lasagna noodles — cooked and drained
Instructions
- 1.Preheat oven to 350°F.
- 2.Cook ground turkey in a large skillet until browned. Drain excess moisture and add pasta sauce. Simmer for 5 minutes.
- 3.In a bowl combine ricotta, cottage cheese, eggs, 1 cup mozzarella, 3/4 cup parmesan, salt, and pepper.
- 4.Spread 1 cup meat sauce in a 9x13 baking dish.
- 5.Layer 1/3 of noodles, half of the cheese mixture, and 1 cup meat sauce.
- 6.Repeat layers once more.
- 7.Top with remaining noodles and remaining sauce.
- 8.Cover with foil and bake for 40 minutes.
- 9.Remove foil, sprinkle remaining mozzarella and parmesan, and bake another 10 minutes until cheese melts.
- 10.Let stand 10 minutes before serving.
Jeff's note
Using cottage cheese and lean turkey reduces calories significantly while maintaining the classic lasagna texture.
