Turkey Taco Soup

Ingredients

Protein

  • 1 lb lean ground turkey93%–99% lean

Soup Base

  • 4 cups chicken brothlow sodium recommended
  • 1 can diced tomatoes14–15 oz

Vegetables & Beans

  • 1 cup oniondiced
  • 1 can black beansdrained and rinsed
  • 1 cup corndrained if canned

Seasonings

  • 1 packet taco seasoningor about 2 tablespoons homemade taco seasoning
  • saltto taste
  • black pepperto taste

Finishing

  • 1 tablespoon lime juicefresh squeezed
  • 2 tablespoons cilantrochopped

Instructions

  1. 1.In a large pot cook the ground turkey and diced onion over medium heat until browned.
  2. 2.Add taco seasoning and stir to coat the meat.
  3. 3.Add diced tomatoes, black beans, corn, and chicken broth.
  4. 4.Bring to a simmer and cook for about 20 minutes.
  5. 5.Stir in lime juice and cilantro just before serving.
  6. 6.Taste and adjust salt and pepper if needed.

Jeff's note

Finishing with lime juice and cilantro brightens the flavor without adding calories.
